Not only is this one of my most favourite ingredients, but also thanks to the avocado, it's the only reason I've ever remembered the word for a lawyer in Spanish.
You've all seen the best ways to use it thanks to it being the most photographed food on social media, however here's a recipe for something I created in haste for the children's tea last week when the fridge was bare, and it went down a storm.
2 ripe avocados (the flesh should squeeze out easily when you've sliced it in half)
a handful of fresh herbs (I used basil and coriander)
Zest of a lemon
Juice of half a lemon
A generous pinch of S&P
Put all the ingredients apart from the cheese into a blender and whizz until you have a smooth paste. Stir through cooked pasta of your choice, and grate a generous heap of parmesan or whatever cheese you have handy, on top.
You can also stir through any left over ready cooked veggies that you have in the fridge. Or a few crispy bits of bacon. Very versatile, very tasty.
