This recipe is adapted from one by Bee Wilson - although I substituted butter for oil which I think adds a little more flavour.
300g oats ¼ tsp salt 1 tsp brown sugar 75g salted butter, diced 75ml boiling water

Pre heat your oven to 200° and line 2 trays with baking parchment. Spread the oats onto one of the trays and bake for 10-15 minutes but be careful not to burn them. Tip approximately half the oats into a blender and whizz them to a relatively fine powder. Add the butter to the boiling water and add the mixture to the blender along with the salt, sugar and remaining oats. Blitz briefly until the mixture comes together. Roll the mixture out to approx. 5mm thickness and cut out rounds with a cookie cutter. Place the rounds carfefully onto your lined baking sheets and bake for 20 minutes. Turn them carefully with a fish slice and bake for a further 5 minutes. Let them cool a little on the baking sheet then transfer them to a cooling rack.
Delicious with slices of avocado, or simply spread with some butter and honey.
