So simple, and so perfect for dinner a deux or even for a dinner party with a few extra sides. The key is to get your hands on the freshest mackerel. Why not try out an order with Fish For Thought Cornwall
Serves 2 hungry people
2 large or 3 small fresh whole mackerel, gutted (or 5-6 fillets)
half a lemon, sliced
For the Salsa:
1 avocado, diced
8-10 cherry tomatoes, roughly chopped
2 spring onions, finely chopped
Large handful of coriander leaves, finely chopped
Half a red or green chilli, seeds removed and finely chopped
Juice of 1 lime
10 small (10cm) tortillas - you can buy them on line here
Preheat your oven to 200°C. Lay the mackerel onto a lined baking sheet, stuff them with slices of lemon, season well with salt and pepper, and drizzle with a bit of olive oil. Put them into the oven for 10 minutes (12 if using larger fish). (If usng fillets they will take less time to cook - 6-8mins)
Whilst the fish cooks, prepare your salsa. Combine all the ingredients in a bowl, squeeze over the lime juice and taste for seasoning. Drizzle with some olive oil and toss to combine.
Check your mackerel. To check if they are cooked gently push the fish with a knife to see if the flesh comes away from the bones. If it doesn't, give them another minute or 2 in the oven.
Warm your tortillas for 30 seconds in the microwave, fillet your fish and serve chunks of the mackerel on your tortillas with a spoonful of salsa and a garnish of micro leaves ( I've discovered these ones on Ocado and they are delicious and look pretty).
